The easiest strawberry marmalade ever


It´s so easy to make that it is almost unbeliavable... 

Put in a pan 1 kgr of strawberries, after washing and cutting them. Add 150 grs of sugar, the juice of one lemon and 1 tbsp of corn starch. Mix well and put on low heat,  removing constantly during perhaps 15 minutes, until it is homogeneous and looks like these. Natural and perfect!

Blueberries and Banana muffins


These are some of the muffins


And these... if we could smell them here! They smell delicious... and taste like it could be expected!

To get them we need...



125 of oat bran 
125 of oat flakes 
80 grs of brown sugar
1 tbsp baking powder
4 very ripe bananas
1 cup of milk (120 ml)
2 eggs
100 grs of blueberrys
juice of 1 lemon


Combine all these together and put the mixture at the oven for 25 mins with 375ºF (180ºC)

Carrot and poppyseeds muffin

These muffins are an organic and perfect option for a good breakfast... here you have the

Ingredients:
240 grs oat flakes
50 grs blueberries
50 grs raisins
100 grs shredded carrot
30 grs poppyseeds
120 ml skimmed milk
3 large eggs
70 grs brown sugar
1 tsp lemon juice

Here they are! 

Ready to be tasted...

These ingredients give 15 muffins.


All you need to do is to mix all ingredients in a bowl, put in the muffins in the oven for 20 minutes at 375ºF (180ºC)... and let them cool...

My favorite Cupcakes... So far


Lemon cupcake with Cream cheese frosting 

After giving a try to many of the different options Alma Obregón has in her book and webpage, I can say that these are my favourites... the perfect cupcake with the perfect frosting... in spanish for fun


Ingredientes:

100 ml de aceite de oliva
200 grs de azúcar blanco
3 huevos M
200 grs de harina de todo uso
1 cucharadita y media de levadura Royal
60 ml de leche semidesnatada
60 ml de zumo de limón
1 cucharadita de aroma de vainilla

En un bol se tamizan la harina y la levadura. En otro bol se mezcla bien el aceite con el azúcar. Luego se añaden los huevos uno a uno, mezclando bien después de cada huevo. Se añade la mitad de la harina y levadura reservada en el bol. Se incorpora la leche que tendrá disuelta la vainilla y después la mitad restante de la harina y la levadura. Por último se añade el zumo de limón y se mezcla bien. Listo para hornear en los moldes por unos 20 a 25 minutos a 180º.

Cream cheese frosting

125 grs de mantequilla a temperatura ambiente se baten con 300 grs de azúcar glas y una cucharada de zumo de limón. Un par de minutos a velocidad baja y luego unos 3 minutos a velocidad alta. Luego se añaden 125 grs de queso crema normal (nunca light). Se bate por 5 minutos a alta velocidad. Se puede poner el colorante que se desee. Listo para decorar. 

Colors may be used to play with in order to make the cupcakes look better. As Alma Obregón recommends, I go with Sugarflair ones in paste. I use to add them to the batter when everything else is in it, and the same goes to the frosting... enjoy!

Another strawberry cake? perhaps the best!

Here is a piece of it... you can see the strawberry chunks in there. How to get it? Mix 200 grs of butter with 200 grs of brown sugar until it becomes smooth and homogeneous. Then add 4 eggs, one at a time, mixing thoroughly. Then include 145 grs of all purpose flour, 1 tbsp baking powder, 1 tbsp vanilla extract and 120 ml skimmed milk. Mix again and when all is blended, add 145 grs of flour and mix. It´s time for the 500 grs strawberrys, cut in quarters. As the batter is thick, strawberrys will incorporate and not sink. It´s important for the cake to be filled with chunks everywhere. This mix is enough to have two layers for the cake. Put it in the oven at 375ºF (180ºC) for 50 mins until ready. Let it cool. 

For the icing, mix in a bowl 100 grs of unsalted butter softened, 125 grs of cream cheese, 300 grs of icing sugar, the zest of one lemon and 2 tbsp lemon juice. Mix up at low speed for one minute and then top speed for 5 minutes until it thickens. Time to decorate. Keep this cake in the refrigerator, if there´s enough for a  second serving time... ;)




Organic banana and oats muffin

 Necessary for these? 3 ripe bananas smashed, 1 cup of milk, 2 eggs, 1 tbsp of baking powder, 3 cups (280 grs) oatmeal, 50 grs of brown sugar and 50 grs chocolate chips. And that´s it. Put every ingredient (except the chocolate chips) in a bowl and mix until weel combined. Prepare the cups and preheat the oven (375ºF or 180ºC), add the chocolate chips and then fill until 2/3 each cup. 


Now to the oven for 20 minutes or until the borders become lightly brown. Let cool and...


Ready to enjoy!

Strawberry Cheese Cake


This cake has 3 steps. First one, the cake itself, after that the sweet cheese and then the strawberry marmalade.

To make it, we begin with the jam. 400 grs of strawberry sliced mixed with 3 tsp sugar slow cook for 5 minutes. 1 and a half tsp of corn stach diluted in 3 tsp of water must be added revolving continuosly to avoid lumps, cooking for 3 extra minutes. Set aside.

The sweet cheese filling  needs 240 grs of cream cheese, one egg and 70 grs of sugar. Beat the cheese for 1 minute until creamy, add the egg and sugar and mix well. Set aside.

The cake uses 250 grs of all purpose flour and sugar (175 grs) combined. Then add 125 grs of cold butter and mix thoroughly. Take 100 grs of this mixture and reserve in a bowl, for the topping. The rest of the batter needs baking powder (1 tbsp) and baking soda (1 tbsp). After these, add one large egg, 180 ml of milk cream and vanilla (1 tbsp). The batter must be placed in a bowl leaving space in the center to be filled with the cream cheese and strawberry jam. The last must be the topping of sugar, flour and butter. 55 minutes at 185ºC. And enjoy!
